How pan size substitution works

When a recipe calls for a pan you don't have, matching the baking surface area is the key to keeping the batter depth — and therefore the baking time and texture — close to what the recipe expects. This calculator computes your pan's area and compares it to common standard pan sizes.

If your pan's area is noticeably different from any standard size (shown with a ~ prefix), you may need to adjust the batter amount or baking time, since a shallower or deeper layer of batter bakes differently than the recipe's intended depth.

Frequently asked questions

Why does area matter more than just the pan's name or shape?

Two pans with very different shapes can have nearly identical baking surface areas, meaning batter will spread to a similar depth in both — area is a better predictor of how a recipe will bake than shape alone.

What if my pan's area doesn't closely match a standard pan?

The result shows a ~ prefix if the match isn't close. In that case, consider adjusting the batter depth by adding or reducing the amount, and keep an eye on baking time since it will likely need adjusting too.

Does pan depth matter, not just the base area?

Yes — this calculator computes the base (horizontal) area, which is the main factor for batter depth, but a much shallower or deeper pan than standard can still affect baking time even with a matching base area.
